Prosciutto Wrapped Dates with Blue Cheese.

Tonight a few of us gathered one last time before I leave for London for some wine and tasty food. My task was the appetizer. I chose to make blue cheese stuffed dates wrapped in prosciutto. They are absolutely delicious, and make the house smell fantastic. What's not to love.

What you will need:

20 slices thinly sliced prosciutto (if it's too thick it will be too chewy for your guests)

2-3 dates/per guest that you are serving (I like to cut them in half once they are out of the oven, so that's really 4-6 individual nibbles per person)

3/4 Cup Blue Cheese

2 tsp Chipotle Peppers (small tin in Mexican food section of grocery store)


Directions: 
(Pre-heat oven to 350 F)

1) Slice the dates down one side with a sharp knife and remove the pit.

2) In a small bowl mix the blue cheese with the chipotle peppers (just enough to give it a little kick- taste as you go!)

3) Use a small spoon to stuff the blue cheese mixture into each date (about 1/2 tsp per date)

4) Wrap each date with a slice of prosciutto (depending on the size, you can sometimes make a slice last for two dates)

5) Place on foil lined cookie sheet and bake for 15 minutes

Don't forget to let them cool for a few minutes after taking them out of the oven, as they are always absolutely scalding....nobody likes a burnt tongue.

I also like to slice them in half to serve more manageable bites (this avoids the two bite messy scenario).
